Outdoor cooking has always been about more than food. It’s about connection, relaxation, tradition, and the simple joy of cooking in the open air. But for decades, the tools we’ve used to cook outdoors have stayed surprisingly limited. One grill for burgers. A smoker for ribs. A pot for boiling. A pan for frying. An oven for baking. The result? Cluttered patios, complicated setups, and far too much time switching between appliances instead of enjoying the moment.

The WildTable seeks to resolve these issues, by offering an all-in-one, aesthetically engineered cooking solution that can grill, fry, smoke, slow roast, bake, steam, and boil with excellent results. Furthermore, many of these functions can be done at the same time, ensuring everything can come together for the perfectly timed meal. 

And if that wasn’t enough, this can all be done while sitting around the table, smokefree, while enjoying the generous warmth from the fire.

The below explains more about the variety of different cooking methods achievable on the WildTable, and what makes it the ultimate all-in-one charcoal cooking option.

1. Grilling

Grilling is where it all began, and it’s what the WildTable does better than anything else. Versatility is the key to allowing you to achieve precisely the finish you want.

Grilling is done with the burner door open. The internal cooking basket is the first option, adjustable in height using the internal rod and basket tool. As you are grilling inside the firebox, heat levels are high and proximity to the embers will mean a high sear on the outside can be easily achieved, creating a caramelised crust while retaining juices inside. The dual air controls and flue enable you to manage the draw across the coals, giving precise control over cooking heat intensity and naked flames.

With the door open, the Maxi Grill comes into play. Teeth inside the burner door allow you to clip in grill racks at various heights, letting you grill at different distances from the coals and therefore different temperatures - or even adjust mid-cook. Using multiple grill racks expands your cooking space, enabling you to cook different foods simultaneously at varying temperatures, ultimately giving you complete control.

2. Frying

The teppanyaki cooking plate was a true masterstroke in the evolution of the WildTable, transforming an already exceptional grill into a large, versatile enamelled surface, perfect for frying. Simply load the firebox with a generous amount of charcoal, then place the teppanyaki plate on top of the burner door (make sure the door is closed to protect the plate). After approximately 15 minutes, the plate will be hot and ready to cook everything from burgers, sausages, and steaks to vibrant padron peppers, tender asparagus, or even egg fried rice! It is that simple.

In true teppanyaki style, guests can watch the action unfold, or get hands-on and cook part of the meal themselves. And with the burner door still accessible while frying, you can easily refuel the fire or even roast something in the firebox at the same time.

3. Smoking

The precision temperature control achievable on the WildTable allows you to maintain low heat for a long time, keeping your meat moist while building layers of smoky flavour that shortcuts simply cannot replicate. While we always recommend grilling over charcoal, you can enhance the taste by adding your preferred wood chips into the mix, such as mesquite, oak, or hickory. These can be put directly onto the embers, but for a more intense smoke, soak the wood chips in water to increase their moisture content, then place them in a foil tin and set it on top of the hot coals to burn slowly.

The enclosed firebox gives you precise control over airflow: adjusting the twin air controls down and partially closing the flue damper slows the rate of air passing through, retaining more smoke within the cooking chamber. The result is big flavours — think tender beef brisket, succulent pulled pork, fall-off-the-bone ribs, or flaky hot smoked salmon.

4. Slow Roasting

Slow roasting demands steady heat, controlled airflow, and excellent moisture retention — all of which are well within the WildTable’s capabilities. By building a generous bed of embers and allowing them to reach the ideal cooking stage, you create a stable heat source with impressive longevity. Using the WildTable thermometer to monitor internal temperatures, airflow can then be finely adjusted via the dual air controls and flue damper, enabling precise heat management without the need to open the burner lid.

The food can be positioned on the internal cooking basket at a chosen height to regulate direct heat exposure, whether aiming for crisp, crackling skin or a succulent, juicy interior. Cooking in foil can further enhance moisture retention when required. Pork shoulders will become melt-in-the-mouth masterpieces, beef brisket will roast evenly from edge to centre, and dishes that often intimidate home cooks are transformed into reliable showstoppers.

5. Baking

While Cashmere Caveman Co. offers a dedicated charcoal oven compatible with both the WildTable 12 and WildTable 8, the WildTable itself is also fully capable of baking directly within the firebox. The internal cooking basket allows you to suspend food at your preferred height above the embers, giving you precise control over heat exposure. The glass viewing panel in the burner lid lets you monitor the cooking process without opening the door, while the WildTable thermometer ensures accurate temperature management throughout the bake.

6. Steaming

Placing a cloche over the teppanyaki cooking plate effectively creates a compact sealed steam oven. The convenient wooden stopper at the top of the cloche can be easily removed, allowing liquids to be poured directly inside to generate steam (remember to replace the stopper to keep the steam in!). This might simply be water for steaming vegetables, or something more exciting like white wine for cooking mussels, or perhaps a blend of chilli oil and soy to infuse dumplings with Asian flavours. The result is well seared but beautifully steamed food, and once you have tried this method, it will undoubtedly become an integral part of every WildTable experience. 

7. Boiling

The radiant heat generated by the firebox makes boiling water effortless once at full temperature. For those using the WildTable 12, saucepans, stockpots, or the copper kettle can be placed directly onto the cast iron saddle, where they will quickly come to the boil. Users of smaller WildTable models can achieve the same result by positioning those items on top of the teppanyaki cooking plate above the burner door. Whether you are preparing sauces, boiling vegetables, or simply brewing a tea or coffee, this feature ensures you have all cooking methods available to you to produce the perfect meal.
